Welcome to the forum.

 

To be clear, are you saying the coolant level in the expansion tank is going down and keeps needing to be topped up ?

If so you must have a leak which needs to be repaired. This could be to the outside through a hose/water pump/gasket/air bleed cap/radiator/heater matrix failure, loose expansion tank cap or a leaking head gasket so it is going in to the engine oil or a cylinder and out the exhaust. If it is not repaired and the coolant level drops too far you risk damage to the engine.

 

The fan running after the engine is stopped will be because the temperature of the engine is high which could be due to a low coolant level but under normal conditions could be the engine is hot due to the trip just made (such as up a long hill, slow moving in traffic) or if you are in a hot country the outside temperature is high.

 

If your car is still under warranty it should go back to the dealer for repair if there is a leak.
